Design build firms or contractors who are willing to do what YOU want (if reasonable and feasible) as opposed to GCs may be the best choice since they will take the time to do it right. Cheap and fast is not the way here...

This is so great…the first thing I do is make shelf adjustments to bring everything down and leave infrequently used, larger, lightweight items up top so they’re easy to pull down without pulling out a ladder. Congratulations on a true labor love—smart and safe can be beautiful!
